Red Berry Coulis

Ingredients

500g fresh or frozen berries (strawberries, raspberries, currants, blackberries)
100g sugar
Juice of half a lemon
2 tbsp water
1 tsp cornstarch
Preparation

In a saucepan, combine the berries, sugar, and lemon juice.
Cook over low heat for 10 minutes until the berries soften.
Dissolve the cornstarch in the water and add it to the mixture.
Continue cooking for 2 to 3 minutes until slightly thickened.
Blend until smooth, then pass through a sieve to remove the seeds.
